To prepare the spicy potato podi poriyal, start by peeling and grating the boiled potatoes.
In a medium-sized pan, heat a teaspoon of gingelly oil and fry the red chilies, chana dal, urad dal, and arhar dal until the lentils turn golden and the chilies become fragrant.
Turn off the heat and allow the roasted ingredients to cool. then, grind them to a fine powder along with a pinch of asafoetida and salt.
In the same pan, add a tablespoon of gingelly oil and place it on low heat.
Mix the ground spice powder with the grated potatoes and add them to the pan.
