Begin by peeling the sweet potatoes and cutting them into manageable chunks.
Boil the sweet potato chunks in salted water until they are tender and easily mashable. drain and set aside.
While the sweet potatoes are cooking, finely chop the shallots and red chilies. also, chop the fresh cilantro leaves.
Once the sweet potatoes are cooked, mash them thoroughly in a mixing bowl.
In a separate pan, heat a small amount of vegetable oil and saut„© the chopped shallots and red chilies until they are softened and aromatic.
