Prepare the poha: rinse the poha in cold water and drain well. allow it to rest for a few minutes to soften.
Boil and mash the potato: peel and dice the potato. boil until tender and mash it well using a fork or potato masher.
Chop and blend: finely chop the green chillies and fresh coriander leaves. add the chopped chillies, coriander leaves, dried fenugreek leaves, red chilli powder, and salt to the mashed potato. mix well to combine the flavors.
Add poha and bread crumbs: gently fold in the rinsed poha and bread crumbs into the potato mixture. the poha adds texture and the bread crumbs help bind the mixture.
Shape the patties: divide the mixture into small portions and shape them into round patties or stars, depending on your preference.
