To prepare the spicy potato vindaloo curry, place a large saucepan or heavy-bottomed pot over medium heat.

Add the chopped potatoes to the pot, cover them with water, and add a little salt. bring it to a boil and simmer until the potatoes are par-cooked. they should be soft when pierced with a knife but not mushy.

Strain the potatoes, reserving some boiled water separately, and set both aside for later use.

In a mixer jar, add red chillies, fenugreek seeds, garlic cloves, shallots, cumin seeds, turmeric powder, and vinegar. grind them into a fine, smooth paste to make the vindaloo paste.

Heat oil in a kadai or skillet and add mustard seeds. allow them to splutter, then add curry leaves.
