To start preparing the spiced colocasia and bell pepper stir-fry, begin by cooking the colocasia.
In a pressure cooker, add the colocasia along with 1/2 cup of water. pressure cook for 4 to 5 whistles and then turn off the heat.
Allow the pressure to release naturally.
Once the pressure is released, peel the cooked colocasia and dice them into bite-sized pieces. let them cool and firm up completely.
Heat a tablespoon of sunflower oil in a heavy-bottomed pan over medium heat.
