To prepare the herbed zucchini and bell pepper stir-fry, wash and dry the zucchinis and red bell peppers. cut them into long strips and set aside.
Heat olive oil in a wok or skillet over medium heat. add the minced garlic and saute until it turns golden in color.
Add the sliced onions and saute until they become translucent.
Toss in the zucchini and red bell pepper strips, season with salt, and quickly stir-fry them for a minute.
Sprinkle the fresh thyme leaves, dried oregano, and red chilli flakes over the vegetables. continue to saute for another minute and then turn off the heat.
