To make the spiced bottle gourd paratha, begin by peeling the outer layer of the bottle gourd (lauki), grate it, and squeeze out the excess water. keep the grated bottle gourd aside.
Heat a heavy-bottomed pan, add the grated bottle gourd, and saut„© it until all the water completely evaporates. this process will take about 10 to 15 minutes.
In a large bowl, combine the whole wheat flour, evaporated grated bottle gourd, finely chopped green chili, grated ginger, red chili powder, garam masala, and season with salt. mix all the ingredients well to form a soft dough. add water as needed to achieve the right consistency.
Divide the dough into equal portions and roll out each portion into a thick medium-sized paratha.
Heat a skillet over medium heat and place the rolled paratha on it. cook the paratha on one side for about 10 to 15 seconds.
