Add mustard seeds, asafoetida (hing), organic cinnamon (dalchini), cloves, coriander seeds, black pepper, and red chilies to the pan. saut„© until the spices release their aroma.

Add finely chopped onions to the pan and saut„© until they turn golden brown.

Stir in the bottle gourd pieces, turmeric powder (haldi), and salt. mix well and cook for a few minutes until the bottle gourd becomes tender.
