To prepare spiced bajra aloo paratha, combine pearl millet flour (bajra), wheat flour, mashed potato, chopped fenugreek leaves, crushed chilli, grated raw mango, red chilli powder, turmeric powder, cumin seeds, carom seeds, chaat masala, and salt in a large bowl. mix all the ingredients well.
Gradually, add warm water little by little and start kneading the dough. knead the ingredients well to form a soft dough.
Divide the dough into equal-sized balls, depending on the size of the paratha you prefer.
Dust each ball with flour and roll it out into a paratha of your desired thickness.
If you find it difficult to roll with a rolling pin, you can use your hands to pat the dusted ball uniformly and make the parathas.
