Start by preparing the bottle gourd. peel the bottle gourd and grate it finely using a grater. squeeze out any excess water from the grated bottle gourd and set it aside.
In a heavy-bottomed pan, heat 1 tablespoon of ghee over low heat. add the grated bottle gourd and saute it until the raw smell disappears, and it becomes soft and slightly brown. this will take about 10-12 minutes. keep stirring occasionally to avoid sticking to the bottom.
Once the bottle gourd is cooked, add sugar and continue stirring until the sugar melts and blends well with the bottle gourd. the mixture will become slightly watery due to the sugar.
Now, add the remaining 1 teaspoon of ghee and cardamom powder to the pan. mix everything well and let it cook on low heat until the mixture thickens.
Stir in the chopped almonds and continue cooking the mixture until it reaches a fudge-like consistency. it should leave the sides of the pan and form a thick mass.
