To make the spinach and cornmeal roti, first, wash the spinach thoroughly and blanch it in boiling water for a few minutes.
Drain the water and blend the blanched spinach along with ginger into a smooth puree.
In a mixing bowl, combine degermed yellow corn meal and wheat flour.
Add red chilli powder, cumin powder, and salt to the dry ingredients.
Mix well and then add the spinach puree to form a soft dough.
