Start by washing the spinach thoroughly and chopping it finely. set aside.
In a bowl, combine the soy chunks with warm water and let them soak for about 15-20 minutes to rehydrate. squeeze out the excess water after they are plump and soft.
Heat sunflower oil in a pan over medium heat. add the soaked soy chunks and saut„© them until they turn golden brown. remove and set aside.
In the same pan, add a little more oil if needed. add the sliced garlic cloves and ginger. saut„© until they release their aroma.
Add chopped red onion and green chillies to the pan. saut„© until the onions turn translucent.
