To begin making nutty spinach and potato paratha, knead the dough by combining wheat flour, water, and spinach puree (if using) in a mixing bowl. knead until you have a soft and pliable dough. you can add a few drops of ghee or oil if needed. set the dough aside.
For the filling, in a large mixing bowl, combine mashed potatoes, crumbled paneer, coriander leaves, garam masala, salt, cumin powder, red chilli powder or green chillies (as per preference), chopped mixed nuts, and sultanas. mix well until all the ingredients are evenly combined.
Divide the filling into 8 to 10 equal portions.
Now it's time to stuff the filling into the dough to make the parathas. take a small portion of the dough and roll it into a small circle. place a portion of the filling inside and seal the edges of the dough to enclose the filling completely.
Dust the stuffed dough with some flour and roll it out into a paratha, taking care not to let the filling come out.
