To prepare the spinach and lentil delight, start by washing the red lentils (masoor dal) thoroughly and soaking them in water for about 30 minutes.
In a pressure cooker, add the soaked lentils, chopped onion, sliced green chili, grated fresh ginger, and turmeric powder.
Pour in 2 cups of water and season with salt. give everything a good stir.
Close the pressure cooker and cook the lentils on medium heat for about 4-5 whistles, or until the lentils are cooked and soft.
While the lentils are cooking, wash the spinach leaves and finely chop them.
