To begin making the mixed vegetable curry with malabar spinach, wash all the vegetables and spinach leaves thoroughly.
Set them aside.
Heat mustard oil in a heavy-bottomed pan over low heat.
Once the oil is hot, add panch phoran masala and red chillies. saute for about 30 seconds.
Add the pieces of pumpkin, radish, potato, and brinjal (eggplant) to the pan. saute them well.
