In a small bowl, prepare a semi-liquid slurry by mixing cumin powder, red chili powder, and turmeric powder with some water.
Wash the rice and soak it while proceeding to the next step. in a pan, heat ghee and add the bay leaves, cinnamon sticks, cardamom pods, cloves, and star anise. allow them to splutter and release their aroma. then, add chopped onions and fry until they turn slightly golden brown.
Add ginger-garlic paste and cook until the raw smell dissipates. add chopped tomatoes and mix until they turn mushy.
Pour the prepared masala slurry into the pan and cook for some time. now, add the chicken pieces and some water. let it cook until the chicken is almost done.
Add the soaked rice and mixed vegetables to the pan. stir everything well to combine.
