Wash the rice and lentils (arhar dal and moong dal) thoroughly, and soak them in enough water to cover for at least 30 minutes or up to two hours. this helps in faster cooking.
Heat ghee in a pressure cooker and add cumin seeds, peppercorns, bay leaves, cloves, cardamom pods, ginger, and green chili. saute for two minutes on medium flame.
Drain the water from the rice and lentils and add them to the pressure cooker. dry roast them for 4-5 minutes until a nutty aroma is released. some sticking to the bottom of the pan is normal, but be careful not to burn them.
Add cauliflower florets, diced potato, carrot, french beans, green peas, turmeric, red chili powder, salt, and water to the pressure cooker. close the lid and pressure cook for 6-7 whistles. allow the pressure to release naturally.
Once the pressure has released, open the cooker and mix well. the rice and lentils should have broken down, creating a slightly creamy texture. adjust the salt if needed.
