To start making the mixed vegetable delight (sabzi), clean, wash, and cut all the vegetables as mentioned. place them in a large bowl and add water to soak them. set aside.
Heat mustard oil in a large wok over medium-high heat. add panch phoran masala, bay leaves, and green chillies. wait until they splutter and release their aroma.
Drain the vegetables from the water and add them to the wok. increase the heat to high and mix well.
Sprinkle turmeric powder and salt over the vegetables and cook them on high heat for a minute or two.
Cover the wok with a lid, reduce the heat to low, and let the vegetables cook until they become soft and tender.
