To begin making the flavorful vegetable pulao recipe, wash the rice and soak it for at least 30 minutes. drain the water and set it aside.
Heat oil in a saucepan and add sliced onions, cardamom, cloves, star anise, and cinnamon. cook until the onions turn golden brown.
In another saucepan, bring 4 cups of water to a rolling boil.
Add ginger garlic paste and chopped tomatoes to the pan with the onions and spices. cook until the tomatoes are soft and mushy.
Once the tomatoes are cooked, add red chilli powder, garam masala, and the chopped vegetables (carrots, peas, capsicum, and potato). cook for a minute.
