To prepare the flavorful potato coconut kurma, start by pressure cooking the potatoes until they are soft (approximately two whistles). once boiled, peel the skin and cut the potatoes into cubes. set them aside.
In a mixer, grind all the ingredients mentioned under "to grind" into a fine paste.
In a medium frying pan, heat oil and add the cinnamon, bay leaf, and finely chopped onion. saute until the onions become transparent.
Stir in the ginger garlic paste and saute for a few minutes. add the chopped tomatoes and cook until they form a sauce-like consistency.
Add turmeric powder, red chilli powder, coriander powder, and garam masala powder. cook until the spice powders blend well with the onion-tomato mixture.
