In a large skillet, heat avocado oil over medium-high heat. add the onion, bell pepper, and zucchini. cook, stirring often, until the vegetables begin to brown, which usually takes around 5 to 6 minutes.
Add the chickpeas, coconut curry simmer sauce, and vegetable broth to the skillet. stir well to combine. bring the mixture to a simmer, then reduce the heat to medium-low and let it simmer for about 4 to 6 minutes until the vegetables are tender.
Just before serving, stir in the spinach and allow it to wilt slightly in the curry.
Serve the coconut chickpea and vegetable curry over a bed of cooked brown rice.
