To prepare the thai vegetable delight curry, start by making the yellow curry paste. dry roast the coriander and cumin seeds until aromatic.
In a blender or mixer, combine the roasted coriander and cumin seeds, lemongrass, ginger, onions, red chillies, kaffir lime leaves, garlic, fresh coriander leaves, cumin seeds, turmeric powder, red curry paste, and a little water used for soaking the dry chillies. blend into a smooth paste. this paste can be stored in the freezer for up to a week.
In a shallow fry pan, saute the mixed vegetables, such as potatoes and ladies' fingers, with a little oil. cook them until they are just tender (al dente), and then set them aside.
In the same pan, add a little more oil and heat it. once the oil is hot, add the prepared yellow curry paste and fry it until the raw smell disappears and it becomes aromatic.
Add the saute mixed vegetables to the pan and mix them well with the curry paste.
