To prepare the spiced parsi vegetable curry, start by grinding all the ingredients listed under 'for the ground masala paste' to a smooth paste, adding water as needed. set the paste aside.
Heat a wide pan with oil and add mustard seeds, cumin seeds, red chillies, chopped onions, green chillies, garlic, and ginger for tempering.
Once the tempering is ready, add tomato puree, turmeric powder, coriander powder, red chilli powder, sugar, and salt. cook the mixture over low flame for 3 to 4 minutes.
Add the steamed mixed vegetables and the ground masala paste to the pan. stir and let it cook for another 5 to 7 minutes.
