Prepare the chickpea and spinach kofta:
Boil the chickpeas until they are soft but not mushy. drain and mash them.
In a large mixing bowl, combine the mashed chickpeas, finely chopped spinach, besan flour, chopped onion, minced garlic, fresh thyme leaves, dried oregano, red chilli flakes, black pepper powder, lemon juice, and salt.
Mix everything well until you have a cohesive mixture.
Shape this mixture into medium-sized kofta balls.
