To begin making the spicy spinach and egg scramble, heat a pan with olive oil. add mustard seeds and let them splutter. then, add the chopped onions and red capsicum. saute until the onions become translucent.
Next, add chopped tomatoes, ginger, garlic, and green chillies. stir in the red chilli flakes, coriander powder, turmeric powder, salt, and pepper.
Cook the masala until the tomatoes become soft and the spices are well combined.
Add the chopped spinach and saute until it wilts down.
Create a well in the center of the pan and crack one egg at a time into the well.
