To prepare the spicy mango egg masala, first, follow the instructions on how to boil the eggs. once boiled, deshell the eggs and set them aside.
Heat a kadai or a large pan with oil, add finely chopped onions, diced green bell pepper, and minced garlic. saut„© them until the onions and peppers become tender.
Once the onions and peppers are slightly tender, add the tomato puree, turmeric powder, cumin powder, black pepper powder, and red chilli powder. continue saut„©ing until the water from the tomatoes evaporates and forms a thick paste.
Add butter, grated raw mango, salt, and a pinch of cardamom powder (elaichi) to the kadai. saut„© everything for a few more minutes to allow the flavors to blend.
Cut the boiled eggs into halves and add them to the masala along with the dried fenugreek leaves (kasuri methi).
