To prepare the creamy coconut egg scramble, start by whisking the eggs in a bowl. add coconut milk and a pinch of salt. whisk until the mixture becomes light and fluffy. set aside.
Heat ghee in a pan over medium heat. add cumin seeds and let them sizzle for a few seconds.
Add finely chopped onions and green chilies to the pan. saut„© them until the onions turn slightly caramelized and translucent.
Stir in the ripe tomatoes and continue saut„©ing until they become soft and blend well with the onions.
Once the tomatoes are tender, pour in the whisked egg and coconut milk mixture.
