To prepare the spicy besan stir-fry (besan ki sabzi), heat 2 tablespoons of sunflower oil in a heavy-bottomed pan. add cumin seeds and asafoetida.
Once the cumin seeds splutter, add the chopped green chillies and finely chopped onions. saute until the onions become soft and translucent.
In a mixing bowl, add water to the besan flour. stir in red chilli powder, turmeric powder, and salt to the besan mixture, ensuring all the spices are well combined.
Add the chopped spring onion leaves to the besan mixture and mix thoroughly.
Transfer the besan mixture into the pan with the saute onions and green chillies. stir continuously for about 20 minutes or until the besan is thoroughly cooked.
