To prepare the achari gobi shimla mirch ki sabzi, start by cutting the cauliflower into bite-size florets.
Dry roast the mustard seeds and fenugreek seeds separately in a small pan for about a minute each.
Grind the roasted seeds into a smooth powder using a mixer grinder and set it aside. this will be the achari masala.
In another saucepan, add the tomatoes along with some water and boil them until the skin starts to come off.
Once the tomatoes are boiled, remove the skin, let them cool, and grind them into a smooth puree using a mixer grinder.
