Spicy Bamboo Shoot Stir Fry

To prepare the spicy bamboo shoot stir fry, heat a cast iron skillet over medium heat.

Once the skillet is hot, add olive oil and chopped spring onions. saute for about 2 minutes until the onions become fragrant.

Add the tender bamboo shoots to the skillet and cook for another 2 minutes.

Next, add the sliced button mushrooms, chopped yellow capsicum, and a pinch of salt. stir-fry the vegetables until they are cooked but still retain their crispiness.

Sprinkle red chilli flakes over the stir-fry and stir for a minute to infuse the flavors.
