To commence the preparation of stuffed ivy gourds delight, start by washing the ivy gourds thoroughly. drain and pat them dry using a kitchen towel.
Carefully make a long cross slit on each ivy gourd lengthwise while keeping their shape intact. set aside.
Heat oil in a pan over medium flame. add the dried red chillies and split urad dal. fry until they turn golden brown. remove and keep aside on a plate.
In the same pan, dry roast the peanuts, coriander seeds, and white sesame seeds individually until they release a fragrant aroma. set them aside.
Once the roasted ingredients have cooled, grind them together with some salt in a mixer grinder to create a coarse mixture.
