Prepare the garam masala by dry-roasting the cloves, black cardamom, nutmeg, mace, and bay leaves in a frying pan over medium heat. stir continuously to prevent burning. the spices are ready when the cloves swell, turn grey, and pop. let them cool, then grind them into a fine powder using a spice or coffee grinder along with the grated nutmeg. store any leftovers in an airtight container.
If using saffron to add color to the dish, infuse the saffron strands in 4 tablespoons of tepid water in a small bowl.
To caramelize the onions, heat 6 tablespoons of oil in a heavy-based frying pan over medium-high heat. test the oil temperature by dipping the edge of an onion piece into the hot oil. it should sizzle immediately. if not, wait for 5 minutes until the oil reaches the desired temperature. once the oil is hot, add all of the onions to the pan and stir gently. keep a slotted spoon and plate nearby for draining the onions later.
Stir the onions occasionally as they cook. initially, the oil will become cloudy as the onions release their liquid. after about 10 minutes, the cloudiness will disappear, and the onions will appear glossy and possibly slightly pink. sprinkle a large pinch of salt over the onions to encourage browning and continue cooking for approximately 20 minutes.
Stir the onions regularly to ensure even cooking. eventually, the edges of the onions will turn golden brown, and the middle will become a lovely caramel shade. you will also notice a rich aroma when the onions are caramelized.
