Starting the dish: to prepare the delightful fenugreek ridge gourd delight, warm sunflower oil in a heavy-bottomed pan or kadhai.
Tempering: add cumin seeds and broken red chillies to the oil, allowing them to crackle and release their aroma.
Sauteing onions: next, add finely sliced onions and saute them until they turn pink, soft, and almost translucent.
Adding flavors: add coarsely crushed garlic, green chillies, turmeric powder, and coriander powder to the saute onions. saute this mixture for a minute or two, allowing the flavors to blend.
Adding ridge gourd: now, add the cubed ridge gourd and toss it on high heat for about 3-4 minutes. the ridge gourd will start releasing water as it cooks.
