Heat sunflower oil in a large pan. cut the paneer into cubes and add them to the pan. cook the paneer until it turns golden brown on all sides. remove the paneer from the pan and set it aside.
In the same pan, add the chopped onions and minced garlic. saute them until the onions become soft and translucent.
Cut the cauliflower into florets and add them to the pan. stir-fry the cauliflower for a few minutes until it starts to soften.
Add the tikka masala paste to the pan and mix well with the vegetables. cook for a minute to allow the flavors to combine.
Pour in the tomato passata and stir to coat the vegetables. reduce the heat to low, cover the pan, and let the curry simmer for about 10 minutes or until the cauliflower is tender.
