To prepare the spiced pineapple and tomato curry, heat a kadai (pan) with a little oil over medium heat. add the bay leaf and cinnamon stick.

Next, add the tomato puree and the spice powders: turmeric powder, coriander powder, and red chilli powder.

Saut„© for about 10 minutes until the raw smell of the tomato puree disappears.

Now, add the cubed pineapple pieces to the kadai and give it a good stir.
