To prepare cauliflower and tofu curry with lentils, start by collecting all the necessary ingredients.
Grate the cauliflower using a large grater or use a food processor with a pulse function to mince the cauliflower into rice-sized pieces.
Heat oil in a wide pan. add mustard seeds and let them splutter. then, add cumin seeds and ground cinnamon. allow the cumin to crackle, and add curry leaves and turmeric.
Add the grated cauliflower and cook for about a minute over medium to high heat. incorporate the tofu and gently mix to combine.
Continue cooking for 2-3 minutes until the cauliflower is cooked but still has a slightly firm texture, not overly soft. season with salt and transfer it to a bowl.
