In a medium-sized pan, heat oil over medium heat. once the oil is hot, add mustard seeds.
When the mustard seeds splutter, add the remaining tempering ingredients - split urad dal, fenugreek seeds, asafoetida, curry leaves, and red chillies. fry until the urad dal turns slightly brownish.
Add chopped shallots and cook until they become translucent. then, add chopped tomatoes and cook until they become tender.
Now, add cubed brinjals and potatoes to the mixture in the pan. add sambar powder, red chilli powder, turmeric powder, and salt to the mixture.
Stir well so that the vegetables are evenly coated with the spice blend. cook with the lid covered until the brinjals and potatoes become tender.
