Soak 1 cup of black chickpeas in 3 cups of water overnight or for 7-8 hours.
Pressure cook the soaked black chickpeas with enough water and 1 teaspoon of salt for 15 minutes or until they are cooked and soft. allow the chickpeas to cool down slightly, then drain them.
In a blender, grind the cooked chickpeas into a smooth paste.
In a pan, dry roast the spices for the kebab masala, including kashmiri chilli, cloves, black pepper, coriander seeds, cinnamon sticks, and black cardamom, until fragrant. grind the roasted spices into a fine powder to make the kebab masala.
In a separate pan, roast the besan (gram flour) over medium heat, stirring continuously, until the raw smell disappears. remove from heat and let it cool.
