To begin making the spiced mushroom and quinoa patties, start by cleaning and finely chopping the mushrooms.
Grate the zucchini and carrot. finely chop the green chilli and coriander leaves.
In a mixing bowl, combine the chopped mushrooms, cooked quinoa, grated zucchini, grated carrot, grated mango, chopped green chilli, red chilli powder, cumin powder, turmeric powder, garam masala, lemon juice, and chopped coriander leaves.
Add salt to taste and mix all the ingredients well.
Shape the mixture into patties of your desired size and thickness.
