To prepare the spiced urad and chana dal, combine black urad dal, chana dal, ginger, green chili, tomato, bay leaf, cinnamon stick, turmeric powder, and garam masala powder in a pressure cooker.
Add 2-1/2 cups of water and pressure cook the dal for two to three whistles.
After two whistles, reduce the heat to low and simmer for 10 minutes, then turn off the heat.
Once the pressure is completely released, open the pressure cooker, and your dal is ready.
Check the seasoning and adjust the salt and spices to suit your taste.
