Begin by soaking the soya chunks in hot water for 10 minutes. once soaked, drain the water and squeeze out any excess moisture from the chunks.
Transfer the soaked soya chunks to a grinder or food processor and coarsely grind them. be careful not to turn them into a paste; a coarse texture is desired.
In a large bowl, combine the ground soya chunks, finely chopped onion, chopped green chillies, grated ginger, fresh coriander leaves, gram flour, bread crumbs, red chilli powder, cumin powder, chaat masala, and maggi masala powder. mix everything well to form a uniform mixture.
Take portions of the mixture and shape them into equal-sized balls. you can use a cookie cutter or shape them into simple round patties.
Wet your hands with a few drops of water to prevent sticking, and flatten each ball into a flat round kebab shape. repeat the process until all the mixture is used and kebabs are formed.
