To begin preparing the stuffed sweet potato snake gourd delight, first pressure cook the sweet potatoes with water in a pressure cooker for about 5 whistles.
While the sweet potatoes are cooking, soak the sliced snake gourd in water with a pinch of salt and let them rest for at least 15 minutes.
Once the pressure is naturally released from the cooker, remove the sweet potatoes and drain any excess water.
Heat a flat skillet with oil, add mustard seeds and allow them to splutter for a few seconds.
Toss in the curry leaves and let them crackle.
