To begin making the bitter melon delight, wash the bitter gourd, cut it lengthwise, and remove all the seeds.
Chop the bitter gourd into small pieces.
Add 1 teaspoon of salt and a pinch of turmeric powder to the bitter gourd slices and mix well.
Set it aside for 30 to 40 minutes. the bitter gourd will release some water; discard it.
Sprinkle a little water again, mix, and squeeze the bitter gourd slices with your hand. this will help reduce the bitterness.
