To prepare the no onion no garlic moong dalma, start by rinsing the yellow moong split and soaking them in water for about 15-20 minutes. drain and set aside.
In a pressure cooker, combine the soaked moong dal, mixed vegetables, turmeric powder, red chilli powder, and a pinch of salt. add enough water to cover the ingredients and pressure cook until the dal is soft and well-cooked.
In a separate pan, heat ghee. add bay leaf, cumin seeds, and grated raw mango. saut„© for a minute until fragrant.
Add the cooked moong dal and vegetable mixture to the pan and give it a good mix.
In a small frying pan, heat a bit of ghee and add the panch phoran (mix of cumin seeds, mustard seeds, fennel seeds, nigella seeds, and fenugreek seeds). let them splutter and release their aroma.
