To prepare the nutritious spinach and moong dal crepes, begin by cleaning, washing, and soaking the yellow moong dal in water for about 4 to 5 hours.
Once the moong dal is well soaked, grind it to a smooth and thick batter. ensure you add water gradually to achieve the desired consistency.
Transfer the moong dal batter to a mixing bowl and proceed to the next step.
Finely chop the fresh spinach, onion, green chillies, ginger, and coriander leaves. add them to the moong dal batter.
Incorporate the cumin seeds, turmeric powder, red chilli powder, thick curd, and lemon juice into the batter as well. mix all the ingredients thoroughly until well combined.
