Finely slice the red onion and crush the garlic cloves. keep the garlic and onion separate for later use.
Crush the black peppercorns to a coarse powder and set aside. also, pick the leaves from the fresh thyme sprigs and finely chop the parsley. keep these herbs aside for garnishing.
Place a large skillet or wok over medium heat and add olive oil. allow the oil to heat up.
