Start by soaking the urad dal, idli rice, and soya beans separately in bowls of water. let them soak for a few hours or overnight.
In a separate bowl, combine fenugreek seeds and chana dal with the urad dal. allow them to soak together.
Once the ingredients are soaked, drain the water and grind them together to form a thick and smooth paste. add a little water if needed to achieve the desired consistency.
Add salt to the batter and mix well. cover the bowl and let the batter ferment for at least 6 hours or overnight. this will help the batter rise and become light and fluffy.
After the fermentation process, give the batter a gentle stir to incorporate any settled ingredients.
