To start preparing the spiced chickpea fritters with fresh flavors, begin by soaking the chickpeas (kala chana) in water overnight.
The next day, transfer the soaked chickpeas along with the water to a pressure cooker. pressure cook on medium flame for about 30 minutes.
Once the pressure is naturally released, drain the water from the chickpeas and transfer them to a mixing bowl.
Use your fingers to mash the cooked chickpeas. add chopped onion, ginger, garlic, green chilies, fresh coriander leaves, mint leaves, lemon juice, and the dry spices - salt, chaat masala, raw mango powder (amchur), and cumin powder.
Mix all the ingredients well to form the chickpea fritter mixture.
