In a pan, saute the green pumpkin, garlic, onion, and ripe tomatoes.
Once the veggies are saute, allow them to cool down before blending. in a blender jar, add the saute veggies along with 1/2 to 1 cup of water. blend until smooth, ensuring a relatively thick texture.
In a separate pan, heat olive oil and add mustard seeds, cumin seeds, and asafoetida. once the seeds start to crackle, add ginger chilli paste and saute.
Next, add chopped green capsicum and tofu cubes. saute for 2-3 minutes.
Then, add the prepared pumpkin puree and all the other spices including turmeric powder, garam masala, and coriander powder. mix well and bring it to a boil.
