Heat 3 teaspoons of oil in a large pan or kadai.
Add bay leaves, cumin seeds, fenugreek leaves, and a pinch of asafoetida (hing) to the hot oil. saute the spices until they release their aroma.
Stir in 2 green chilies and 1 teaspoon of ginger paste. saute until the mixture becomes fragrant.
Add 600 grams of diced pumpkin to the pan and saute for 2 minutes, ensuring that the pumpkin is well-coated with the spices.
Sprinkle 0.25 teaspoon of turmeric powder, 1 teaspoon of kashmiri red chili powder, 0.5 teaspoon of coriander powder, and 0.5 teaspoon of garam masala powder over the pumpkin. also, add 0.75 teaspoon of salt. mix well and saute for another 2 minutes to allow the spices to blend with the pumpkin.
